How to Extract Coffee Properly

Why it matters

Great coffee isn’t about expensive gear or complicated techniques it’s about extraction. Get extraction right and your coffee will be smooth, balanced, and full of flavour. Get it wrong and even the best beans will taste bitter, sour, or flat.

Extraction is simply the process of pulling flavour from ground coffee using hot water. The goal is to extract enough flavour to create balance, without overdoing it.

The Goldilocks Zone: Not Under, Not Over

  • Under-extracted coffee tastes sour, weak, or sharp.

    This usually happens when water flows too quickly, the grind is too coarse, or brew time is too short.
  • Over-extracted coffee tastes bitter, harsh, or dry.

    This is often caused by grinding too fine, brewing too long, or using water that’s too hot.

The aim is even extraction, pulling the good flavours first, stopping before the harsh ones take over.

Four Things That Control Extraction

1. Grind Size

Grind size controls how fast water moves through the coffee.

  • Too coarse = water runs through too fast
  • Too fine = water struggles to pass through

Match your grind to your brew method and adjust in small steps.

2. Brew Time

Most methods have a sweet spot:

  • Espresso: 25–30 seconds
  • AeroPress: 1–2 minutes
  • Cafetière: 4 minutes
  • Pour-over: 2–3 minutes

Longer isn’t stronger, it’s usually just more bitter.

3. Coffee-to-Water Ratio

Strength comes from how much coffee you use, not how long you brew it.

A good starting point:

  • 1:15 to 1:17 (coffee to water)

Adjust the dose, not the time.

4. Water Temperature

Water that’s too hot burns flavour.

Aim for 92–96°C just off the boil.

Consistency Beats Complexity

You don’t need lab equipment or barista-level obsession.

What matters is:

  • Using the same ratio
  • Brewing for the same time
  • Making small changes, one at a time
